For the Cookie Dough:
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- ¼ cup strawberry puree or jam
Instructions
- Make the Cookie Dough: In a bowl, whisk together flour, baking soda, and salt. In another bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla, then gradually mix in the dry ingredients. Chill the dough for 30 minutes.
- Prepare the Cheesecake Filling: Beat softened cream cheese with powdered sugar until smooth. Swirl in the strawberry puree or jam without overmixing. Freeze spoonfuls of the filling on parchment paper for easy handling.
- Assemble the Cookies: Flatten dough portions, place a frozen filling scoop in the center, and wrap the dough around it. Roll into balls, ensuring the filling is fully enclosed.
- Bake the Cookies: Preheat oven to 350°F (175°C). Bake cookies on a lined sheet for 12–14 minutes until edges are golden. Cool for 5 minutes on the sheet, then transfer to a rack.
